The Bambra Sparkling is a blend of Pinot Noir and Chardonnay from the Nursery Block. It is aged on lees for five years prior to release and only available to Cellar Door and Mailing List customers.  Appearance: Everose gold with a fine persistent bead.Nose: A bouquet of brioche aromas with underlying apple blossom, citrus notes and hints of strawberry. Palate: Generous and unfolding. Apple and citrus flavours are balanced by yeasty bottle derived characters that build in the mouth. A low dosage coupled with a crisp acid backbone adds structure to the wine which ends with a satisfying dry finish. Serving suggestions: While very pleasing on its own, a sparkling wine of this complexity can be matched with a range of foods. This includes canapés, antipasto, oysters, smoked salmon, crayfish, goose, duck, and some pasta dishes. The adventurous might try it with a creamy blue cheese.
